1. “Bamboo-tube rice“
If Ninh Binh is famous for fried rice, Quang Nam has chicken rice, Sai Gon is proud of broken rice, Bac Kan province also has a very unique dish made from rice, that is bamboo-tube rice.This kind of rice dish is cooked in a bamboo tube. Therefore, it brings a special flavor- the mountain’s fragrance. Mountainous tribes make bamboo-tube rice from glutinous rice with some other ingredients. Glutinous rice is soaked a few hour in water to expand, then washed carefully. Then you left it drain, put the rice into bamboo tubes then use dry banana leaves to cover the open top.

The content of cakes are wrapped in layers of bamboo leaves. “Gio” is dipped in condensed cane sugar.
